Description: Fenugreek is a strongly
aromatic annual, growing to about thirty-two
inches, producing trifolate leaves that
look like clover, is small and yellowish-white
in colour. It produces pealike flowers and
sickle-shaped pods. It is widely cultivated
in India, Africa, and parts of the US. The
seeds are collected during the autumn.
Uses: Research has found that the
seeds contain substances that stimulate
the pancreas to release digestive enzymes,
thereby aiding in digestion. They are also
used to lower blood sugar and blood cholesterol
levels. It also acts as a anti-inflammatory.
